As a busy working mom, I’ve discovered that the idea of making things “from scratch” is a very low priority. That doesn’t mean, however, that you have to settle for lower quality food. Here are a few things that I’ve done to spice up ordinary box cake mixes.

1. Add a table spoon of mayo to any cake mix. It sounds disgusting but you would be surprised at the effect it will have on your cake. The cake will be incredibly moist and you will have no idea that the mayo is even there.
2. Don’t be afraid to experiment. A spoon full of strawberry preserves to a strawberry cake or hand full of chocolate chips in a chocolate cake can give the box mixes and extra kick.
3. Make your cake look as good as it tastes. Just because it came out of a box doesn’t mean it has to look like it. Use easy decorating stratgies such as topping your cake with fresh fruit to make your cake look fantastic.
4. Always remember, unless you tell them they don’t have to know that this isn’t something you’ve slaved away on for hours . It can be your secret.
