Need something to do with left-over holiday turkey?

As the holidays approach so does the over abundance of left-over turkey in most households.  Since there are only so many turkey sandwiches a person can eat we opt for this casserole.  It’s so yummy you won’t mind eating turkey for the 4th day in a row and all the ingredients can be mixed and cooked in one pan so clean-up is minimal.

Here’s what you will need:

1 package frozen broccoli

2 cups chopped turkey

1 cup Miracle Whip

2 cans cream of chicken soup

8 oz shredded cheese

4 cups soft bread crumbs

1tbsp. lemon juice

1 stick of margarine

 Layer in a 9X13 pan the broccoli and turkey.  Mix miracle whip, lemon juice and soup; pour over broccoli and turkey.  Spread cheese over the top.  Top with bread crumbs.  Drizzle melted butter over top.  Bake at 425 F until broccoli is tender and cheese is melted.

You can also use this recipe year round by using chicken instead of turkey. 

In a hurry?  Cook the broccoli in the microwave before adding to the cassarole.  This will cut the bake time significantly.
