Prune Cake. Sounds Scary but it’s actually quite tasty.
I’ll admit that the words prune and cake sound a little strange in the same sentence but I promise this cake is actually very good. If you are looking for something different to try, give this cake a chance. You’ll be glad you did.
Here’s what you will need
3 eggs
1 cup oil
1 1/2 cup sugar
2 cups flour (self rising)
1 tsp cinnamon
1 cup butter milk
1 cup prune cooked (seedless) diced
1 cup nuts
1 tsp vanilla
Blend sugar, eggs and oil. Add dry ingredients. Add vanilla nuts and prunes. Put into greased 9×13 cake pan and bake at 300 until done.
Icing:
1 lb of brown sugar (light)
1/2 cup of milk
Add sugar and milk to pan and stir until sugar is melted. Continue to cook over medium heat until you can drop a couple of drops into a cup of cold water and it stays in a drop.
Frost cake and serve.
